The highlight of the experience is the suspended dinner, featuring a four-course Japanese menu called “Fanning the Flame” served in hot air balloon-shaped pods designed by Summerill & Bishop and set up in the gardens.

The menu combines sushi, sashimi, immersive yakiniku barbecue, and a themed dessert called “The Clouds.” The price is £135 per person, £85 for vegetarian or vegan options. This experience can be booked independently of your stay.

The signature restaurant, The Dining Room – Japanese Grill, offers delicate dishes such as sushi, sashimi, and nigiri, grilled in a Josper oven and orchestrated by chef Wojciech Popow, who has been recognized for his mastery and trained at Gordon Ramsay and Noma. The menu highlights local ingredients, some of which are fermented or wild-harvested, with creations such as Toro Tartar with Yuzu Miso, charcoal-grilled wagyu, and Turbot Nigiri with wood ants and marigold oil.
